Just like many others, I staked the claim that this is my year, and I am going to take my health to a better place. It’s safe to say that this journey has gotten off to a slow start. It may be slow, but my efforts are steady and in this turtle race, that is what matters. I won't be hopping on any fad and extreme diets. I just want to LIVE a healthier lifestyle, and I believe I have been making steps in the right direction (I think).
When it comes to kale, I love that green leafy greatness! You can get a heap of your daily nutrients in one serving, so it’s perfect for those wanting to eat better on a budget and those with little time to grocery shop and meal prep. It’s typically $0.99/bundle at your local grocer, and it’s possibilities are endless. Now two bundles, two meal preps, and a snack later, here is what the kale I’ve been eating.
Ginger Kale Salad with Shrimp
Ingredients - Kale, Shredded Purple Cabbage, Ginger Dressing, Shrimp (Olive oil, sea salt, minced garlic, paprika, white pepper, cayenne pepper).
Super simple meal. Little to no prep. I washed the kale and cabbage and allowed it dry while I prepared the other ingredients. In a skillet on low heat, I added olive oil and two cloves of garlic that I had pressed, and left those flavors to blend. In a separate bowl I added my shrimp and coated it in EVOO then added the seasonings, mixed all that in, and added it to the skillet and cooked until it was finished. In the bowl with the kale and cabbage, I stirred in my favorite Makoto ginger dressing!. I plated my veggies and topped with the meat and enjoyed! Yum!
Kale Chips x Watermelon Water
Kale chips are an amazing and healthier alternative to an overly greasy and salty bag of chips. Just lay the pieces of kale on baking sheet and drizzle with olive oil and lightly season with sea salt. Find a super simple recipe from the Food Heaven Show, here. The Glowing Fridge’s Cleansing Detox Soup
I am all about that meal prep life! I do not like to cook every night when I come in from work, so meal prep and planning is a necessity for my lifestyle. When Googling different ways to detox my body and get my skin to naturally glow, I came across The Glowing Fridge’s Cleansing Detox Soup. Super simple and very tasty! With ingredients like carrots, broccoli, kale (obviously) and tomatoes, this soup is quite filling. I enjoyed it for 3 days and froze the remains for a lazy day.
